<p>There isn’t a school day that goes by that I worry about my son’s lunch. Of course, I ask myself the usual questions: Is he eating what he has in the bag? Will he trade his apple for a cookie? Will the school lunch he’s ordering once a week be nutritious? He’s a kid! He’s not a fussy eater, but there are plenty of days that he has come home with a bag full of food. I’ll ask him “what did you eat for lunch?” He always says, “nothing.” What’s a parent to do?</p>
<p>Plenty of Mom’s worry about what to feed their kids for lunch. They always ask me which foods are the best to pack. I believe there’s no such thing as a good or bad food. Remember, the food police aren’t arresting anyone at Ben and Jerry’s. Some foods are much more nutritious than others. The key to feeding your child well is to offer variety and make sure to include fruits and vegetables. Unfortunately, 90% of Americans don’t eat the recommended five or more servings of antioxidant-rich and nutritious fruits and vegetables daily. Kids eat even less. While supplementation may guarantee you get enough Vitamin C and Beta Carotene, it‘s not a substitution for all the thousands of healthful nutrients found in fruits and vegetables that you can’t get in a pill. You want your kids to grow up healthy and strong. Here are some winners that will compliment any school lunch and help make your fruit and vegetable choices count.</p>
<p><strong>Broccoli:</strong> Here’s an all American winner, as if you didn’t already know! Broccoli is chock full of vitamins, fiber, and minerals. It taste great, too. Broccoli is high is Vitamin C and carotenoids. These are antioxidants that help boost our immunity and protect our body from environmental insults like cigarette smoke and pollution. The two types of fiber in broccoli , soluble and insoluble, help lower cholesterol, fight cancer, and keep our digestive systems in tip-top shape. Broccoli also contains indoles and isothiocyantes that help decrease estrogen’s effectiveness and protects our cell’s DNA (the building blocks of genetics and reproduction). It’s also an excellent source of folic acid-a B vitamin that seem to be critical for cardiovascular health. Not bad for being green!</p>
<p>Kids either love it or hate it. Here are some ideas to help you kids eat more of the green stuff. Broccoli tastes best if it’s blanched first, cooked in boiling water or steamed for 3 to 4 minutes. Stop the cooking with an ice bath if you want to eat it cold. Marinate it in your favorite light Italian dressing and place it in a zip lock bag for lots of flavor. Substitute broccoli for half the cabbage in your favorite coleslaw recipe and add to a sandwich instead of lettuce and tomato. Don’t throw away the stalks.</p>
<p><strong>Carrots:</strong> If this vegetable was marketed for its benefits, I bet it would sell for $20 per pound! Carrots have over 200 carotenoids, one of which is beta carotene. Scientists aren’t sure which caroteniod is responsible for protecting us from cancer. Since beta carotene provided such disappointing results in recent research, I’ll keep eating carrots and skip the beta carotene. Carrots also contain phenolic acid, a phytochemical that may reduce the risk of cancer.</p>
<p>A great way to get your kids to start eating carrots is top his/her favorite sandwiches with shredded carrots along with lettuce and tomato. Kids will enjoy a bag of baby carrots (they are large carrots cut into small bite-sized pieces) with some low fat dressing on the side for dipping. Even try it shredded on a peanut butter and jelly sandwich if your kids won’t eat their vegetables.</p>
<p><strong>Beans:</strong> Most kids won’t eat beans, “I don’t like them.” “They taste yucky.” My son loves black beans, soybeans and chickpeas. There are so many different types of beans all with a different texture and flavor. Don’t give up on your first try. Beans are a great way to add a powerful nutritious punch to any meal. A large portion of the world population depends on beans to provide them with nutrition. People of the orient uses soybeans, Americans use peas, Mediterranean and Middle Eastern countries depend on chickpeas and lentils, Africans uses a combination of beans. Beans have the highest source of fiber for a whole food. They also are loaded with cancer-fighting phytochemicals like genistein and flavones. Soybeans have the most impressive list of plant chemicals to help fight, cancer, and high blood pressure, and menopausal symptoms. Add to its long list of benefits its ability to lower blood cholesterol and you have a winner. Use canned beans if you’re in a rush. Open a can of chickpeas, chop up an onion and some red pepper (if your child doesn’t like them, you can always substitute another bean and vegetable until they are happy), toss in your favorite salad dressing and let it marinate overnight. Let your child spread black beans or prepared humus (a chickpea spread) on a flour tortilla. When at home, add cheese and chopped onion and cilantro, heat it in the toaster oven or microwave and have a side of salsa with carrot sticks for a delicious and well rounded lunch.</p>
<p><strong>Apricots, Melon, and Papaya:</strong> All these fruits are loaded with nutrients. They’re high in Vitamin C and mixed carotenoids, potasium and have lots of fiber. Papaya has enzymes that help digestion and break down protein. Some of these enzymes have anti-inflammatory qualities. All of these fruits are great as snack foods in a lunch bag. Whether dried or fresh, these fruits taste great solo or with other foods. Combine dried apricots and toasted almonds for a tasty snack.</p>
<p><strong>Spinach:</strong> Here’s another vegetable with abundant amounts of beta carotene and potassium. Most kids say they don’t like spinach probably because it’s cooked incorrectly. Spinach tastes best if cooked when young and tender. Older spinach tends to be woody and tough. Don’t use aluminum cookware. The spinach will pick up an acidic taste and lose its beautiful green color. Don’t overcook spinach. It gets waterlogged easily and is probably the reason why many don’t like it. Use it on sandwiches with lettuce and tomato.</p>
<p><strong>Herbs and Spices and Tea:</strong> Don’t to forget to spice up your kid’s life with garlic, turmeric, ginger, rosemary and green and black tea. Many parents think kids don’t like spices. It’s true their taste buds are more sensitive to hot and spicy foods. But, if you don’t introduce these flavors at an early age, your children won’t learn to like them. These additions to your children’s diet will provide antioxidants such as curcumin, lycopene, allicin, and flavonoids. They taste great and may be the hidden ingredients that provide protection from cancer, heart disease, and high blood pressure. Use lightly sweetened green tea mixed with juice for a great tasting thirst-quencher.</p>
<p>Next time you question whether your children’s lunch is packing enough nutrition, try these easy ways to add more fruits and vegetables. You’d be surprised how easy it is to fee your children power foods for a powerful body!</p>

<p style="text-align: left;">Is your baby about to start solid foods? Are you thinking of making your own baby food?</p>
<p style="text-align: left;"><img src="http://www.babiesonline.com/articles/wp-content/uploads/2008/04/make-your-own-baby-food-the-easy-way.jpg" alt="make-your-own-baby-food-the-easy-way.jpg" align="left" />When you make baby&#8217;s first foods, you can save money and reduce waste. You also can choose more nutritious options. Fresh foods are typically more nutritious than canned, and you can purchase organic food to prepare for baby if you wish. You can also avoid unwholesome ingredients that show up in commercial baby food.</p>
<p style="text-align: left;">Making baby food doesn&#8217;t have to be expensive or time consuming. In fact, the easiest and cheapest way is the best way!</p>
<p style="text-align: left;"><strong>The easy way to making your own baby food:<br />
</strong>1. Don&#8217;t bother with buying one of those baby food grinders. They&#8217;re hard to clean and too much hassle.</p>
<p style="text-align: left;">2. If you wait until your baby is 6 months old to start solids, you can almost always just mash with a fork to the desired consistency. If you&#8217;re breastfeeding, you can even wait until baby&#8217;s &#8220;pincer grasp&#8221; is developed and offer him small finger foods like peas, bits of grated apple, and the like. The pincer grasp is developed when baby can pinch small objects (like those bits of carpet fluff or food on the kitchen floor!) inbetween his thumb and first finger. In fact, if you have a family tendency towards food allergy, waiting longer to start solids may be preferable. No matter what baby&#8217;s age, always offer one food at a time and wait several days to watch for signs of allergy before offering another. Take it slow.</p>
<p style="text-align: left;">3. Start with fresh single ingredient foods like:<br />
Banana<br />
Steamed carrot, turnip, potato, yam<br />
Avocado<br />
Ripe pear, peach, melon, plum<br />
Cooked squash<br />
Grated apple- raw or steamed<br />
Peas<br />
Well cooked beans<br />
Hard cooked egg yolks (avoid the whites until 1 year)</p>
<p style="text-align: left;">Some of these foods could be served raw. Others are lightly steamed (steaming retains more nutrients than canning), to make them softer for baby.</p>
<p style="text-align: left;">4. It&#8217;s not necessary to make a big deal of preparing baby&#8217;s food. If you want to take a lot of time blending food and freezing them in ice cube trays, you could certainly do that. But I&#8217;m all for the easy approach!</p>
<p style="text-align: left;">Although you do want to avoid giving baby salt and sugar (and spices that may upset the tummy), you can usually just take an ingredient from your own menu and &#8220;make&#8221; baby&#8217;s dinner.</p>
<p style="text-align: left;">For instance, if you&#8217;re steaming veggies to serve at dinner, take a tablespoon of them out of the pan before you add butter and salt. Put this in baby&#8217;s plate and mash away. Voila! Instant baby food with no extra work. Or take a bit of beef from your roast and mash mash mash until it&#8217;s very soft.</p>
<p style="text-align: left;">Even when you&#8217;re at a restaurant, you can either bring an apple with you and &#8220;grate&#8221; it finely with a spoon at your table, or bring along a banana or other portable food. Any restaurant with a salad bar would have cooked beans or avocado. Or give baby a bit of your baked potato (before you add the goodies on top).</p>
<p style="text-align: left;">Life with a new baby is challenging enough. Keep starting solids simple!</p>

<p style="text-align: left;">Making baby food is healthier for your baby, and offers your baby an introduction to foods rich in variety, flavor, color, taste and smell. All of your friends (and your mother-in-law) will think you are a super parent for making your baby’s food. The big secret &#8212; it is super easy and takes less than 30 minutes per week.</p>
<p style="text-align: left;"><img src="http://www.babiesonline.com/articles/wp-content/uploads/2008/04/homemade-baby-food-the-big-secret.jpg" alt="homemade-baby-food-the-big-secret.jpg" align="left" />A common approach to making baby food is called the “ice cube tray” method. The concept is simple: make large quantities of basic food purees using a standard blender or food processor and freeze it in single servings (1 ounce) in ice cube trays. With this method, you only need to make baby food once, maybe twice, per week. Over time you build up a large variety of single-serving baby food cubes in the freezer.</p>
<p style="text-align: left;">Here are the four basic steps of making baby food with the ice cube tray method:</p>
<p style="text-align: left;"><strong>Step 1: Prep<br />
</strong>Depending on the type of baby food you are preparing, you will need to wash, chop and peel the fruits and vegetables. You should not use detergent or bleach when washing fruits and vegetables because these chemicals can leave a residue that will be absorbed by porous food like produce. If you are using frozen produce, simply open the package.</p>
<p style="text-align: left;"><strong>Step 2: Cook<br />
</strong>Cook the food in the microwave or use a stovetop method of steaming. We prefer microwave cooking for several reasons: saves time because foods cook faster; retains more nutrients than other cooking methods; and it is easier clean up. If you prefer the stovetop method of cooking foods, you must use a steamer basket. DO NOT boil food, boiling food reduces nutrient content. Foods must be cooked well. They are done when the can be pierced or mashed easily with a fork.</p>
<p style="text-align: left;"><strong>Step 3: Puree<br />
</strong>Pour the food and cooking juices into a food processor or a blender and puree. Food consistency is created during this step. You want your baby to have food that is soft and velvety in texture. You may need to add water to some foods to get the right consistency. Although water will slightly dilute the food’s nutritional value, the difference is not significant enough to worry about.</p>
<p style="text-align: left;"><strong>Step 4: Freeze</strong><br />
Pour the food puree into ice cube trays. Cover and place them in the freezer for eight to 10 hours or overnight. Pop the baby food cubes from the freezer trays. Place the cubes in a freezer storage bags or stackable containers (Label the bag/containers with the date and the type of food), and return them immediately to the freezer. Baby food cubes stay fresh for up to two months.</p>
<p style="text-align: left;"><strong>Sample Recipe:</strong> Apple Puree</p>
<p style="text-align: left;">6 medium golden delicious apples</p>
<p style="text-align: left;"><strong>Step 1: Prep</strong><br />
Wash, peel, core and cut apples into one-inch (3 cm) slices.</p>
<p style="text-align: left;"><strong>Step 2: Cook<br />
</strong>Place apples in a microwave safe dish. Cover. Cook 5 minutes and let stand for 5 minutes. Cook an additional 5 minutes. The apples are done when they can be pierced easily with a fork.</p>
<p style="text-align: left;"><strong>Step 3: Puree</strong><br />
Place apples and cooking juices into a blender or a food processor. Puree to a smooth texture.</p>
<p style="text-align: left;"><strong>Step 4: Freeze</strong><br />
Spoon into So Easy Baby Food Trays or ice cube trays. Cover. Place in freezer eight to 10 hours or overnight. Remove cubes from trays, place in storage container or freezer bag, and return immediately to the freezer.</p>
<p style="text-align: left;">Makes 24 1-ounce servings. Stays fresh for two months in the freezer.</p>
<p style="text-align: left;">To serve, select frozen apple cubes from the freezer, defrost and warm, check the temperature and feed.</p>
<p style="text-align: left;"><strong>Age to introduce:</strong> About 6 months</p>
<p style="text-align: left;">Serving homemade baby food</p>
<p style="text-align: left;">Using the ice cube tray method of making baby food makes it is easy to create a large variety of food cubes in your freezer. When it is time for feeding, simply select the food cubes from the freezer, thaw them and feed them to your baby. You may want to warm the food first. Baby food can be served cold, at room temperature or slightly warm. Never serve hot food to your baby, and always check the temperature of food or drinks before feeding them to your baby.</p>
<p style="text-align: left;">Baby food should have soft, velvety consistency. If you are just starting solids, thinner food is better than thicker food. If you defrost the food and see that it is too thick, you can easily thin it by adding some breast milk or formula. This also adds a little extra nutrition too. If the opposite happens, and the food is too thin, you can easily thicken the food by adding a little baby cereal, mashed banana or plain yogurt.</p>
<p style="text-align: left;">After your baby has been introduced to a variety of single flavor foods and he is a little older, you can begin making meal time more interesting and introduce your baby to array of tastes, by combining different foods to create medleys.</p>
<p style="text-align: left;">Here are some examples of foods cubes that taste great together:</p>
<ul style="text-align: left;">
<li>Green peas and sweet potatoes</li>
<li>Green beans and white potatoes</li>
<li>Broccoli, cauliflower and melted cheese</li>
<li>Butternut squash, corn and mashed tofu</li>
<li>Peaches, pears and rice cereal</li>
<li>Mango, Papaya and banana</li>
<li>Raspberries, apples, yogurt and ground walnuts</li>
</ul>

<p style="text-align: left;">There is nothing cuter than watching your little one chase food around the highchair tray with her fingers, and seeing the sense of accomplishment in her face when a tiny little piece of food actually makes it her mouth.</p>
<p style="text-align: left;"><img style="border: 0pt none; margin: 5px 10px; float: left;" src="http://www.babiesonline.com/articles/wp-content/uploads/2008/04/tips-and-recipes-for-introducing-finger-foods1.jpg" alt="tips-and-recipes-for-introducing-finger-foods.jpg" width="200" height="300" align="left" />When your baby is between eight and nine months old, you can begin to introduce finger foods to encourage your baby to begin self-feeding. It is very important that the texture of finger foods be very soft, so that your baby can “gum” the foods. To get food soft enough for gumming, many of them will need to be cooked.</p>
<p style="text-align: left;">Examples of finger foods that can be served raw include small pieces of:</p>
<ul style="text-align: left;">
<li>Banana</li>
<li>Avocado</li>
<li>Tofu</li>
<li>Semi-hard cheeses &#8212; Jack, Colby, (introduce over 12 months)</li>
<li>“O” shaped cereal</li>
<li>Puffed rice cereal</li>
</ul>
<p style="text-align: left;">Examples of cooked finger foods:</p>
<ul style="text-align: left;">
<li>Apples slices</li>
<li>Pear slices</li>
<li>Whole asparagus spears</li>
<li>Carrots sticks/rounds or baby carrots</li>
<li>Zucchini or yellow squash rounds</li>
<li>Broccoli spears</li>
<li>Sweet potato slices or cubes</li>
<li>Whole green beans</li>
</ul>
<p style="text-align: left;">To smooth the way for introducing finger foods here are few tips that may help you out:</p>

<li>Always feed your baby in a “seated position.” The risk of choking rises as you introduce finger foods.</li>
<li>Never let your baby eat foods without adult supervision.</li>
<li>Don’t be in a rush. Introduce finger foods one at a time and slowly add different ones.</li>
<li>Continue to feed your baby softly, pureed baby foods for most of the meal, and transition to more finger foods over a six- to eight-month period.</li>
<li>Start with foods your baby likes.</li>
</ul>
<p style="text-align: left;">Here are few finger food recipes to help you get started with finger food fun!</p>
<p style="text-align: left;"><strong>Sweet Potato Cubes</strong><br />
Your baby will like the bright orange color and sweet taste of these little morsels. Babies have a natural sweet tooth developed from drinking breast milk or formula, which are sweet. The natural sweetness of sweet potatoes make them a favorite among babies!</p>
<p style="text-align: left;"><strong>Directions:</strong><br />
Wash, peel and dice a sweet potato into small cubes about ½-inch in size. Place the cubes in microwave-safe dish, cover, and cook them in the microwave on HIGH for 5 to 7 minutes. Let them stand for 5 minutes. You&#8217;ll know they are done if you can mash them with a fork.</p>
<p style="text-align: left;"><strong>Add a little spice in her life:</strong><br />
Sprinkle a dash of cinnamon, nutmeg or ground ginger on the sweet potato cubes before you cook them for a little extra flavor.</p>
<p style="text-align: left;"><strong>Storage:<br />
</strong>Covered container. Stays fresh four to five days in the refrigerator or up to two months in the freezer.</p>
<p style="text-align: left;"><strong>Age to introduce: </strong>About nine months</p>
<p style="text-align: left;"><strong>Cinnamon Apple Slices</strong><br />
Your baby will like the sweet juicy flavor and the challenge of picking these up will help develop her fine motor skills. These are super easy to make and great for any meal or as a snack!</p>
<p style="text-align: left;"><strong>Directions:</strong><br />
Wash, peel and core 1-2 golden delicious apples. Cut the apples into slices about ¼-inch thick. Place the slices of apples in plastic bag and sprinkle a dash of cinnamon over the apples slices. Close the bag and shake it up so the cinnamon is distributed evenly over all of the slices. Place the slices in a microwave safe dish and cook them in the microwave on HIGH for 3 minutes. Let them stand for 5 minutes. They are done if a fork slides into them easily. Cool completely before serving.</p>
<p style="text-align: left;"><strong>Storage:</strong><br />
Lasts four to five days in the refrigerator or up to two months in the freezer.</p>
<p style="text-align: left;"><strong>Age to introduce: </strong>About nine months</p>
<p style="text-align: left;"><strong>Dusted Tofu Cubes<br />
</strong>These nutritious, little cubes are fun to pick up and they taste good too! For a little variety, you can use banana instead of tofu.</p>
<p style="text-align: left;"><strong>Ingredients:<br />
</strong>1/4 teaspoon flax seed, finely ground<br />
1-2 tablespoons of Cheerios (or other cereal) OR 2-3 graham crackers<br />
5-6 1/2-inch cubes of firm tofu</p>
<p style="text-align: left;"><strong>Directions:</strong><br />
Place ground flax seed and cereal/graham crackers in a bag and crush into crumbs. Add tofu and shake lightly to coat the tofu cubes with the crumb mixture. Serve immediately.</p>
<p style="text-align: left;"><strong>Age to introduce:</strong><br />
Over 12 months (without flax seed 8-10 months)</p>
